SOUP
Every Wednesday was soup night at my house for many years, no matter the season. It was a tradition that began out of necessity due to Wednesday night commitments, and it stuck. These days, I don’t have a hard and fast rule about making it midweek, but it’s always on the weekly menu somewhere. We love soup!
Soup is such a comforting meal. It warms us up and makes us feel cared for and cozy. Soup is inexpensive, nutritious, and a perfect dinner for busy weeknights. When bringing a meal to a friend, consider soup for its ease, or when you make a big pot at home, share some with your neighbor. Most soups freeze well. I store my soup and deliver it to others using these containers.
Below, you’ll find recipes for the ten soups I love and always make. I hope you enjoy them as much as my family does 🙂
Chicken Tortilla Soup
I’ve used this recipe for years. It’s loaded with flavor! Make sure you don’t skip her “secret” to making the soup taste so good.
One Pot Vegan White Bean Soup
This soup is gluten-free, plant-based, and so creamy!
Paleo Chicken Pot Pie Soup
This recipe comes together quickly and is so easy with store-bought, pre-cooked chicken. I use canned coconut cream or vegan heavy cream as substitutes for heavy cream. Occasionally, I bake these biscuits to go along with this soup.
Turkey, Kale, and Brown Rice Soup
This a very hearty, flavorful, and healthy soup!
Green Goddess Soup
This recipe is perfect when you need some extra greens in your diet. For some crunch, we love to top this soup with pepitas.
Spiced Chickpea Stew with Coconut and Turmeric
This soup is incredible!!!! I’ve made it as directed, and other times, I skipped crisping the chickpeas altogether. I don’t reserve any chickpeas as a topper, either. The flavors are so, so good.
Easy Black Bean Soup
This is a simple vegetarian soup, but you could easily add cooked chicken to it for extra protein.
Five-Ingredient White Chicken Chili
This soup is perfect to make if you’re short on time. It comes together in 15 minutes!
Creamy Bean Soup with Sausage
This soup is a newer addition to my rotation but is here to stay. What a perfect recipe for a chilly night. P.S. I add kale and extra broth.
Italian Lentil Soup
If you think you don’t like lentils, try this recipe. You may change your mind 😉.

Saving this! My family has been teasing me about the amount of soup I've been making this year, but it's such a great go-to. My favorite is throwing all the left-over veggies I didn't get to, adding in a protein and potato, and it's literally been feeding me all season <3
