Cooler weather is here, and that always puts me in the mood for baking. The scent of something baking in the oven wafts through my home and makes it feel so warm and cozy. I enjoy making muffins or coffee cakes for breakfast and cakes, bars, and cookies for dessert. My favorite thing to bake, though, is brownies. I especially love the fudgy kind with crackly edges-yum!
Who doesn’t love a good brownie? This recipe is one of my family’s favorites and is so easy to make. Why use a brownie mix when making these is so simple? They taste ten times better when made from scratch, don’t you agree? I have been known to whip up a batch of brownies at the last minute by request of family and friends or if we have unexpected guests. That’s how easy and delicious they are, and the ingredients are ones I almost always have on hand.
This exact brownie recipe is one I have been using for decades. I love it because everything gets thrown into one pot, they bake, and they are done! So simple and easy cleanup! You can switch it up by adding nuts or omitting them altogether. You can add white chocolate chips instead of semi-sweet chocolate or use almond extract instead of vanilla. Any way you choose, I can guarantee they will be delicious!
Simple, Fudgy Brownies
Ingredients
1 cup butter (2 sticks) (I use vegan butter)
2 cups sugar
2 teaspoons vanilla
4 eggs, slightly beaten
1 cup flour (I use gluten-free flour)
1/2 cup unsweetened cocoa
1/2 tsp. salt
8 ounces chocolate chips (about a cup)
1 cup nuts, optional
Directions
Heat oven to 350 degrees. Grease a 13×9 inch pan or line with parchment paper. In a medium saucepan over low heat, melt butter. Remove from heat. Add sugar, vanilla, and eggs. Stir in flour, cocoa, and salt. Mix well. Add chocolate and nuts (if using). Pour into prepared pan. Sprinkle some extra chocolate chips on top before baking. Bake at 350 degrees for 30 to 40 minutes or until set. Cool on a rack (if you can wait that long 😉.) Makes 36 brownies small brownies or 12 large.
