Breakfast bites, also known as energy bites or protein balls, are a family favorite. I find them to be the perfect thing to nibble on with coffee, grab as I head out the door, or have as a pick-me-up during the day. There are many recipes for these; after trying a few, I like this combination best. It packs fiber and protein into tasty bites using a short list of ingredients. You can add, change, or omit some ingredients to suit your taste (see notes below). I love that they require no baking and can be made in 30 minutes!
Breakfast Bites
These breakfast bites couldn’t be easier to make. You simply mix the ingredients, chill them, and then roll them into balls. They’re made with simple pantry ingredients I almost always have and are the perfect make-ahead recipe for a quick breakfast or healthy snack. They’re much more delicious than store-bought granola bars or energy bites.
Here’s the recipe:
1 cup rolled oats
1/2 cup peanut butter
1/3 cup honey
1/2 cup unsweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup chocolate chips
1 tablespoon chia seeds
1 teaspoon vanilla extract
Directions:
Mix all the ingredients in a bowl until thoroughly mixed. Refrigerate for 30 minutes. Once chilled, roll into 1” balls on wax or parchment paper. I use a small cookie scooper to get a uniform size. This recipe makes about 25 balls. Enjoy immediately or freeze for later.
Notes
Only use rolled oats, not instant or steel-cut oats
Use any nut butter you like (almond, cashew) or sunflower butter.
Use the creamy nut butter, natural or traditional, but not chunky.
Substitute protein powder for the flaxseed if you wish.
If you don’t prefer coconut, omit it and add about 1/2 cup more oatmeal.
Store in the freezer in an airtight container. Allow five minutes to soften before eating.
